For our next ‘Friends at Silex’ we’re super excited to welcome Alba Farnós Viñals & Paul Marsden.

In January 2025, Alba and Paul took over the historic Auberge de l’Abbaye de Montheron, nestled beside the old Cistercian abbey in the heart of the Jorat forest, just outside Lausanne.

Their ambition is to make the Auberge a culinary reference for their region and an ambassador for the richness of the Jorat, building close relationships with local farmers, fishermen, cheesemakers, winemakers and artisans.

Nature is at the heart of the project. Their approach is to keep both food and wine as natural and authentic as possible, while elevating them through precise techniques, thoughtful sourcing and refined choices. Alba, originally from Catalonia, brings together her Mediterranean roots and the seasons and traditions of the Jorat, while Paul, originally from England, follows the same philosophy in the dining room and cellar, with a particular interest in Swiss, natural, organic and biodynamic wines.

Together, they are creating something deeply rooted in the Jorat and designed to last, while weaving their own Spanish and British histories into the continuing story of this historic Swiss Auberge.

Price is CHF150 for the 6 Course Tasting Menu which will be a 4 Hands Format together with the Team from Silex. Drinks are not included, and we are UNABLE TO ACCOMMODATE ANY DIETARY REQUIREMENTS due to the one-off nature of the event. Vegetarian Option is available, please let us know!
